Smoked Ham

Place ham in pan with liquid in bottom  Cover and heat at 325 degrees for 15 minutes per lb

Combine 1 C. Brown Sugar, 1 Tsp. Dry Mustard, 1 C. Orange Juice. Use to base ham during cooking

Ham Basting Sauce

8-10# Rib Roast

1 Tbsp. Olive Oil

2 Tbsp. Salt

2 Tbsp. Ground Pepper

Heat oven to 425. Rub roast with oil, salt, and pepper, Set in a large roasting pan and place in oven. Roast meat for 15 minutes per pound. Check internal temperature after 1 hour 45 minutes. Should read 125 for rare, 135 for medium and 155 for well done. Remove from oven and tent with foil. DO NOT TOUCH for 15 minutes.

Smoked Turkey

Your smoked turkey is fully cooked and only needs to be reheated. Place in a pan or roaster, add a small amount of water to avoid drying out, cover with foil and reheat for 2 hours at 250 degrees.

John Tucker's Holiday Ham

Place the ham in enough heavy duty foil to completely wrap the ham, Score the top of the ham in 1/2 inch squares. Cover the top with pineapple rings, holding in place with half toothpicks. Put a maraschino cherry in each ring. Mix 1/2 cup brown sugar with a big squirt of yellow mustard, add enough orange juice to make runny, then pour on top of ham. Put 1/2 cup raisins on top of the ham. Close foil and put in oven or electric roaster for four hours at 325 degrees. After removing from heat and letting sit for 15 minutes, open top of foil and remove pineapples and cherries and set aside. Slice and place on two different trays, one with fruit and one without. For everyone to enjoy.

Ham Loaf

For the ham loaf:

½ lbs Fresh Ground Pork1 lb Smoked Ground Ham1 Cup Cracker Crumbs1 Cup Milk

2 Eggs

Salt

 

For the ham loaf sauce topping:

1 Cup Brown Sugar

1 tsp. Mustard

¼ Cup Vinegar

¾ Cup Water

 

Cooking Instructions:

Mix well and shape into loaf. Mix brown sugar and mustard. Add vinegar and water. Boil then pour over loaf. Marinate overnight. Bake covered 3-4 hours at 250 degrees or 1 ½ hours at 425 degrees.

1. Remove plastic outer wrap and label.
2) Preheat oven to 350 degrees
3) Bake:Frozen; approximately 1 1/2 hours
Thawed; approximately 45 minutes.
4) Let set 10 minutes before serving.

Meat Loaf/ Ham Loaf

Raisin Sauce

½ Cup Brown Sugar

2 Tbsp Cornstarch

1 Tsp Dry Mustard

1 Tbsp Vinegar

1 Cup Raisins

¼ Tsp Grated Lemon Peel

2 Tbsp Lemon Juice

Mix first three ingredients in a sauce pan. Add vinegar and next three ingredients with 1 & 1/2 cup water. Stir over med heat until thick and bubbly. Serve hot. Makes 2 & 1/2 cups.
